I spent my weekend in a yurt, y’all! After strapping on a pair of snowshoes (for the first time, I might add) and then hiking three miles into Colorado’s backcountry, our outdoorsy party (Myself, the big guy, big guy’s sister, brother-in-law and their 2-year-old son) reached our residence for Saturday night. It was a tiiiny one room tent-like structure with two bunk beds, a small kitchen area and wood burning stove. Using the stove we heated the room from an unbearable 32 degrees to almost 70 in less than half an hour. Glorious!
We packed in some delicious food and had a spaghetti dinner Saturday night (thanks big guy!) and the most unbelievable pancakes I’ve ever had on Sunday morning (Thanks T!). Here’s the recipe for the amazing Oatmeal Buttermilk Blueberry Pancakes courtesy of the New York Times. I really could have eaten about 12 of these, but fortunately a little common sense kicked in, and I remembered that a 3 mile hike out was impending. Post-pancakes and pre-hike, we had a really fun time sledding and playing in the snow. There is something about going fearlessly head first into a snow bank that really makes one feel like a kid again.
